Academic Background:Graduated from Japanese Confectionery Professional Training College (Nihon Kashi Senmon Gakko)

After graduation, Toshinaka Shimizu worked for Ryoguchiya Kasyo as a wagashi (Japanese confectionery) chef. Currently, he sits on the board and serves as an advisor of the confectionery company. In 2014, he was designated as a master under the Monozukuri Meister System (confectionery manufacture) by the Ministry of Health, Labour and Welfare. He actively passes on his skills to younger people by giving guidance at, for example, confectionery schools.

He has been educating the global audience on Japanese confectionery since 2011. In order to help people recognize healthy Japanese sweets as a “culinary intangible cultural heritage” and to popularize the culture of beans, such as adzuki and soybean, along with wagashi throughout the world, he gives guidance on growing the adzuki bean in the Alsatian region, France, as part of efforts to introduce Japanese traditional confectionery making. In addition, he also organizes a wagashi workshop in Paris on a regular basis.
